Heat the oil in a large non-stick frying pan, season the beef with salt and freshly ground black pepper, then fry in two. This butter makes the pudding richer and denser. Chilli con carne is traditionally made with minced beef, but hey, why not mix up the rules a little bit? Make sure you keep the heat hot enough for the meat to fry and become brown, rather than just stew. Bring to the boil, stirring.
